The interior of the restaurant is an immersive experience of many longstanding Japanese traditions. The centrepiece is our 300-year-old sushi counter made from hinoki (Japanese cypress). Behind the Chef, you can see handcrafted wall panels from modern artisans back in Japan. The world is always churning, changing, and twisting the things we know – most traditions are lost to time without innovation for our modern world. While Sushi Oono’s interior features timeless styles and classic materials from Japan, we believe progress is required in all endeavours. The walls of Sushi Oono, for example, showcase multiple finishing techniques with progressive differences, showing how they were refined over time. Japanese shokunin have also added textures to create a relaxing space for you to clear your mind in preparation for your meal. Throughout the restaurant, you will experience a diverse assortment of historic decor. Some traditions, just like edomae sushi, are worth fighting for, to perfectly preserve. Washi wallpaper adorns the ceilings, and kyo-karakami paper featuring ancient designs are proudly displayed on the wall. You will also see examples of ajiro bamboo weaving in the interior design, which has roots thousands of years deep. Hand-carved naguri style wooden panels evoke nature and beauty, stemming from hard work and dedication to a craft. Tradition, dedication, and honouring the past are all integral parts of Chef Ohno’s vision for Sushi Oono.
